Lamb & Lemon Stir-Fry with Zesty Mash
A delicious stir-fry with some zesty mash on the side. Packed with flavour, packed with goodness - and all for just 15 Checks.
- 400 g/14oz potatoes
- A little skimmed milk
- ½ unwaxed lemon zest (grated)
- Salt
- Black pepper
- 1 medium courgette (sliced)
- 85 g/3oz fine green beans ( fresh or frozen)
- Spray oil
- 200 g/7oz lean stir-fry lamb
- 1 clove garlic (crushed)
- 1 tbsp runny honey
- 2 tbsp lemon juice
- Peel and boil the potatoes. Drain and mash with a little skimmed milk.
- Stir in the lemon zest and season to taste with salt and black pepper.
- Boil or microwave the courgettes and beans until crisp tender. Drain.
- Spray pan with oil and heat.
- Add the lamb and stir-fry 2 minutes.
- Season to taste.
- Add the garlic, courgette slices and green beans and stir-fry 2 minutes.
- Add the honey and lemon juice to the pan.
- Stir-fry a further 1 minute.
- Serve half the stir-fry and half the mash to each person.
