Method

  • 1. Scrub the potatoes bake in a preheated oven at 200C (400F) for about an hour, until tender.
  • 2. Slice the baked potatoes in half, length ways and scoop out the flesh leaving a thin layer of potato inside.
  • 3. Finely chop the sping onions and quarter the tomoatoes, then mix with the grated cheese.
  • 4. Spoon the mixture into the hollowed out potato skins and return to the oven for 15 minutes.
  • 5. The skins will crisp and the filling melt together, serve piping hot.
