Smoked Fishcakes

Method

  • 1. Place potatoes in boiling water.
  • 2. Poach your fish in boiling water and the lemon slices.
  • 3. Mix together all other ingredients apart from the breadcrumbs.
  • 4. Place breadcrumbs in shallow bowl.
  • 5. Drain the fish and potatoes once cooked. Add to the leek and herb mixture and mix thoroughly. Mash together with a potato masher.
  • 6. Shape handfuls of the mixture into burger sized cakes with hands the mixture Should make 8 small or 4 large cakes.
  • 7. Place each fish cake in breadcrumbs and cover shaking off excess.
  • 8. Place all the fish cakes on an oven tray greased with spray oil.
  • 9. Cook for approx 20 minutes for 8 small patties and 30 minutes for 4 large.
  • 10. Serve on a bed of mixed salad leaves with a squeeze of lemon juice.
