Method

  • 1. Heat the oven to 180 degrees whilst prepping.
  • 2. Poach your fish in hot water with 2-3 lemon slices and chopped leeks for 4-5 minutes.
  • 3. Mix together all other ingredients, apart from the breadcrumbs, and stir into the mashed potatoes.
  • 5. Drain the fish then to the potato mix and combine throroughly.
  • 6. Shape handfuls of the mixture into burger sized patties (the mixture should make 8 small or 4 medium patties).
  • 7. Pour breadcrumbs into a shallow bowl then turn each fish cake in the breadcrumbs to coat them, shaking off excess.
  • 8. Place all the fish cakes on an oven tray wiped with spray oil.
  • 9. Bake in the oven (or air fryer) for approx 15 minutes for 8 small patties and 20 minutes for 4 large.
  • 10. Serve on a bed of mixed salad leaves with a squeeze of lemon juice.
