Method
- 1. Take a sheet of filo pastry and place on a clean work surface.
- 2. Brush with a little beaten egg and place another sheet of filo pastry on top.
- 3. Continue brushing and layering until all the sheets have been used, brushing the top sheet with the remaining beaten egg.
- 4. Cut the rectangle of pastry lengthwise into 3 long strips, then cut each strip into 4 equal-sized squares, so you have 12 in total.
- 5. Place on a non-stick baking sheet.
- 6. Cook in a pre-heated oven at 200⁰C, gas mark 6 for 10 minutes until crisp and golden.
- 7. Remove from oven and set aside to cool.
- 8. Sprinkle strawberries with sugar and fold gently into the Greek yoghurt.
- 9. Spoon a layer on to one of the pastry sheets and cover with another sheet.
- 10. Cover with more of the strawberry mixture and then top with a third filo pastry sheet.
- 11. Make the remaining stacks in the same way.
- 12. Place each stack on a serving plate and dust lightly with sifted icing sugar.
- 13. Serve immediately.
