Tomato & Vegetable Soup

Method

  • 1. Chop all the vegetables into approx 1-inch chunks and put in a large pan.
  • 2. Add the lentils, herbs and sprinkle in the stock cubes
  • 3. Top with boiling water until all the vegetables are completely covered.
  • 4. Bring back to the boil and then lower heat to simmer until tender, approx 20-30 minutes.
  • 5. Either leave as a chunky vegetable soup or puree using a hand blender and serve
  • If you like a spicy soup, add some chilli powder or other spices to suit your taste.
