Method

  • 1. Slice cabbage quarters into thin strips.
  • 2. Heat oil in large saucepan or stock pot, then add cabbage, carrots and celery, stirring frequently on a medium heat for 10 minutes.
  • 3. Stir in stock and bring to boil. Skim off any foam that rises.
  • 4. Add potatoes, cauliflower, herbs and seasoning.
  • 5. Bring back to boil reduce the heat to low and place a lid on the pan.
  • 6. Simmer 20-25 minutes until the veg is tender.
  • 7. Serve as a chunky soup, or puree with a hand blender.
